Waldorf Salad
1 apple, cubed
Cheese (I usually use either medium, or aged lowfat cheddar), cubed
bell peppers, a variety of colours is nicest
cucumber, cubed
seeds
Once you’ve cubed the veggies, toss them into a large bowl. Depending on the weights you’re allowed, you could also add celery and lettuce. I sometimes mix things up and add spinach and/or radishes as well.
Sprinkle the seeds over the veggies.
Mix together:
1 TBSP Olive Oil
1 TBSP Lemon Juice
a dash of Balsamic Vinegar
Curry Powder to taste
and add to salad.
